100 year old recipe for cheap cuts of meat costing about $5.00 per serve for the budget-minded.

Jackies Soup

  • 1 kilo soup bones (nice and meaty) or about 4 pieces osso bucco
  • or lamb chops or chicken
  • 4 bay leaves
  • Cover with 1 litre of beef stock, bring to boil, then slowly simmer for 1 ½ hour to 2 hours.

 

Chop in small chunks the following veggies- (or any veggies will do)

  • 1 large onion
  • 2 large carrots
  • Stick of celery
  • Cut up broccoli storks (no waste)
  • Potato
  • 6 garlic cloves (chunky)
  • Jar of Leggos tomato, onion and garlic or capsicum paste
  • 1/3 cup of barley (leave it out for gluten-free)
  • Salt and pepper
  • Fresh herbs- parsley, sage, thyme, basil or any herbs

 

Take meat off the bones, pull apart and set aside.

Add more stock if needed and then add veggies.

Add meat about ½ hour before veggies are ready.
