100 year old recipe for cheap cuts of meat costing about $5.00 per serve for the budget-minded.
Jackies Soup
- 1 kilo soup bones (nice and meaty) or about 4 pieces osso bucco
- or lamb chops or chicken
- 4 bay leaves
- Cover with 1 litre of beef stock, bring to boil, then slowly simmer for 1 ½ hour to 2 hours.
Chop in small chunks the following veggies- (or any veggies will do)
- 1 large onion
- 2 large carrots
- Stick of celery
- Cut up broccoli storks (no waste)
- Potato
- 6 garlic cloves (chunky)
- Jar of Leggos tomato, onion and garlic or capsicum paste
- 1/3 cup of barley (leave it out for gluten-free)
- Salt and pepper
- Fresh herbs- parsley, sage, thyme, basil or any herbs
Take meat off the bones, pull apart and set aside.
Add more stock if needed and then add veggies.
Add meat about ½ hour before veggies are ready.
